WAGYU means Japanese cattle in Japan. There are four breeds that make up wagyu, Akaushi being one of them. Akaushi distinguishes from the other breeds not only genetically, but also phenotypically. Making Akaushi cattle able to produce well marbled meat by eating grass in a natural open field. Our meats undergo a wet-aged process for over 30 days, which notably evolves the flavor of the final product.
