GREEK CHICKEN SOUVLAKI

What is souvlaki?

Souvlaki is a popular street food dish in Athens and all over Greece. Similar to kebabs, the term Souvlaki means “meat on skewers.” However, Greeks use this word to describe the meal which includes pita bread, the grilled meat and the creamy and fresh Tzatziki sauce. As other side dishes, you can pair with the refreshing and flavorful Tomato Cucumber Feta Salad.

This is a simple meal to prepare to enjoy with your family.

Marinating Time: 1 hr.

Total Time: 1 hr. 25 min.

INGREDIENTS

  • ⅓ cup olive oil
  • 1 lemon zest
  • 2 tbsp lemon juice
  • 2 tsp oregano (dried)
  • ½ tsp thyme (dried)
  • 4 cloves garlic (minced)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 2 lbs chicken breast cut into bite sized pieces

For the tzatziki sauce:

  • ½ large English cucumber
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 large clove garlic minced
  • 1 tbsp fresh dill chopped

DIRECTIONS

  1. Combine all ingredients except the chicken in a medium bowl
  2. Stir until well combined
  3. Place chicken in a large ziploc bag and pour marinade in then seal the bag and toss until the chicken is thoroughly coated. Refrigerate for at least 1 hr. up to 4 hr.
  4. Preheat a grill to medium high heat.
  5. Remove the chicken from the marinade and thread onto skewers. Discard any remaining marinade.
  6. Grill the chicken for around 10-12 minutes until cooked through, rotating the skewers occasionally so that all sides are evenly cooked.

For the tzatziki sauce:

  1. Grate the cucumber on the large holes of a box grater.
  2. Drain in a fine mesh strainer pushing out as much liquid as possible with the back of a spoon. You can use a kitchen towel or paper towels to soak up any remaining moisture.
  3. Combine the cucumber and the remaining ingredients in a bowl and stir to combine.
  4. Refrigerate for at least 1 hr. before serving to allow flavors to combine.

 

You can accompany your skewers with a Greek Salad, pita bread and French fries.
